The refined antique Lioness Barley is a whole barley grown from Agricultural Company Claudio Grossi, 400 mt. altitude, the plant reaches 2.5 m. in height, threshed by hand.
Barley is the story of Grossi. He toasts with traditional method ‘closed drum ’, than Torrefazione Lady Cafe continues machining, grinding it for infusions, pulverize it and making flour or dough for manufacturing of ice cream and patisserie. Barley flour, as substitute wheat one, gives an extraordinary roasting aroma, especially in aftertaste. A bakery turns it into bread (typical micca Parma, yeast, extremely friable and fragrant than roasting that remains far beyond the sandwich with salted pork) and biscuits (morning and rustic).
